Luigi Pomata is a third-generation chef whose culinary identity is deeply rooted in the traditions of Carloforte, a small island in Sardinia.
Growing up in a family of restaurateurs, he developed a vision of cooking as a daily act of care and a preservation of local memory.
His style is defined by a unique blend of Mediterranean heritage—specifically Ligurian-Tabarchi influences—and modern innovation,
often centered around the raw materials of his homeland.

His professional development was shaped by significant experiences in international gastronomic capitals,
where he worked alongside world-renowned masters. In New York, he refined his skills at the celebrated Le Cirque with Sirio Maccioni,
and in London, he worked with Marco Pierre White. These global experiences provided him with technical rigor and a broad cultural perspective,
which he eventually brought back to Italy to reinterpret Sardinian gastronomy with a contemporary flair.
Today, he operates several venues in Cagliari, including his flagship restaurant, Luigi Pomata, as well as Luigi Pomata Bistrot and the Next Food & Lounge.
Known as the “tuna chef,” he is a leading expert on Carloforte bluefin tuna and runs a cookery school dedicated to sharing his expertise.
Beyond the kitchen, Pomata is an accomplished author of several books, such as My Story in a Dish and Tuna and Fish of the Mediterranean.
He also leads impactful projects like Flavors in Color, which aims to make the pleasure of food accessible to individuals with swallowing difficulties.
